Abstract The objective of this study was to evaluate the seasonal effect of months of the year upon the physiological and productive responses of crossbred dairy cows raised in an Amazonian climate. Twenty lactating cows were evaluated, fed on Brachiaria decumbens pasture, with free access to water and mineral supplementation. Data from climate variables air temperature (AT), relative humidity (RH), rainfall (RA) and temperature and humidity index (THI) were recorded dur ing the months of January to April 2019. The physiological data collected were: respiratory rate (RR, mov/min), heart rate (HR, beats/min), rectal temperature (RT, ºC), udder surface temperature (UST, ºC), body surface temperature (BST, ºC), dorsum surface temperature (DST, ºC), front surface temperature (FST, ºC) and rear shin temperature (RST). Milk production (MP) was also measured. There was a significant difference (P<0.05) of RST and RR with values ranging from 34.8 to 35.5°C and 32.0 to 36.2 mov/min, respectively. There were no significant difference (P>0.05) for BST, and the values for MP and THI were 3.8; 3.8; 4.6; 4.1 kg and 77.7; 79.7; 80.6; 80.1, respectively. It was concluded that there was a seasonal effect of the months of the year evaluated on the respiratory rate of animals, however, it did not change the MP and the THI. The Amazon environment is conducive to causing thermal stress in lactating cows raised on pasture, requiring the use of shading to facilitate the ability of these animals to dissipate heat.

Resumo O objetivo desse estudo foi avaliar os efeitos sazonais dos meses do ano sobre as respostas fisiológicas e produtivas de vacas leiteiras mestiças criadas em clima amazônico. Foram avaliadas 20 vacas lactantes, alimentadas com pasto de Brachiaria decumbens, com acesso livre a água e suplementação mineral. Foram registrados dados das variáveis climáticas temperatura do ar (TA), umidade relativa do ar (UR), precipitação pluviométrica (PP) e índice de temperatura e Umidade (ITU) durante os meses de janeiro a abril de 2019. Os dados fisiológicos coletados foram: frequência respiratória (FR, mov/min), frequência cardíaca (FC, bat./min), temperatura retal (TR, ºC), temperatura superficial do úbere (TSU, ºC), temperatura superfície corporal (TSC, ºC), temperatura superficial do dorso (TSD, ºC), temperatura superficial da fronte (TSF, ºC) e temperatura superficial da canela (TSCA, °C). Também foi mensurada a produção de leite (PL, kg). Houve diferença significativa (P<0,05) da TSCA e FR com valores variando de 34,8 a 35,5°C e 32,0 a 36,2 mov/min, respectivamente. Não houve diferença significativa (P>0,05) para TSC e os valores observados para PL e ITU foram 3,8; 3,8; 4,6; 4,1 kg e 77,7; 79,7; 80,6; 80,1, respectivamente. Houve efeito sazonal dos meses avaliados sobre a taxa respiratória dos animais, no entanto, isso não alterou a PL nem o ITU. O ambiente amazônico é propício a causar estresse térmico em vacas lactantes mantidas a pasto, sendo necessário o uso de sombreamento para facilitar a capacidade de dissipação de calor corporal desses animais.

RESUMO Os objetivos foram avaliar dietas contendo teores de óleo de linhaça in natura (1,0; 3,8 e 5,2% da MS da dieta) sobre as características da carcaça e cortes cárneos, e correlacionar esses resultados com medidas corporaisin vivo de 14 fêmeas e 15 machos castrados Nelore x Canchim. Os animais foram confinados individualmente recebendo 20% de cana-de-açúcar como volumoso e 80% de concentrado, em um delineamento de blocos ao acaso (teores de óleo x condição sexual). Todos os animais de cada bloco foram abatidos quando o peso corporal médio atingiu 500 kg. Não foram observadas interações entre os fatores estudados. Acrescentar até 5,2% de óleo de linhaçain natura da dieta de bovinos cruzados aumenta o peso dos principais cortes cárneos da carcaça, reduz as perdas no resfriamento e não altera o teor de gordura renal-pélvica-inguinal. Fêmeas e machos castrados Nelore x Canchim produzem quantidades similares de carne do traseiro especial, em peso e rendimento. Juntamente com o peso corporal, a medida do contorno pelviano é a mais indicada para auxiliar na formação de lotes homogêneos para o abate ou experimentação, por apresentar as melhores correlações com as características utilizadas na comercialização brasileira de carne, como peso e rendimento da carcaça.

SUMMARY The objectives were to evaluate diets containing levels of in natura linseed oil (1.0, 3.8 and 5.2% of diet DM) on carcass characteristics and meat cuts, and correlate these results with in vivo body measures of 14 heifers and 15 steers Nellore x Canchim. The animals were confined individually receiving 20% of sugar cane as roughage and 80% concentrate, in a complete randomized block (oil content x sexual condition). All animals of each block were slaughtered when the average body weight reached 500 kg. No interactions between treatments were observed. Add up to 5.2% of linseed oil in diet of crossbred cattle increases the weight of the main carcass cuts, reduce the loss during cooling and does not change the level of renal pelvic-inguinal fat. Heifers and steers Nellore x Canchim produce similar amounts of weight and yield hindquarter’s meat. Along with body weight, the extent pelviano contour is the most indicated to assist the formation of homogeneous lots for slaughter or trial, because showed the best correlation with the characteristics used in the Brazilian market of meat, such as weight and carcass yield.

Objetivou-se avaliar as diferenças na composição química e lipídica do contrafilé (Longissimus thoracis) e da picanha (Biceps femoris) in natura ou assados de bovinos alimentados com diferentes fontes de óleo. Para isto, foram utilizadas amostras, seccionadas em bifes de 2,54 cm, do contrafilé e da picanha, provenientes de 35 carcaças de tourinhos da raça Nelore, confinados por 96 dias e abatidos com peso médio de 532,17 ± 30,25 kg e 24 meses de idade. A picanha apresentou os valores mais baixos de proteína e cinzas (18,57 e 0,90%, respectivamente). No entanto, os maiores teores de extrato etéreo também foram encontrados para este corte comparado ao contrafilé (3,37 e 1,90%, respectivamente). Maiores teores de colesterol foram encontrados na picanha em relação ao contrafilé (40,91 e 30,93 mg 100 g-1, respectivamente). O contrafilé in natura apresentou menores teores de ácidos graxos saturados e maiores quantidades de ácidos graxos poli-insaturados. Para as relações dos ácidos graxos ômega-6: ômega-3, os melhores valores foram encontrados na carne in natura. O contrafilé, no presente estudo, mostrou-se mais saudável pela maior quantidade de ácidos graxos poli-insaturados que a picanha. Assar a carne diminui os teores de ácidos graxos poli-insaturados, ômega-3 e ômega-6, além da relação ômega-6: ômega-3.

This study evaluated the chemical and lipid composition of uncooked or cooked loin (Longissimus thoracis) and rump (Biceps femoris) in samples of 2.54 cm thick from 35 carcasses of Nellore young bulls finished in feedlot for 96 days and slaughtered at an average weight of 532.17 ± 30.25 kg and 24 months of age. The rump had the lowest level of protein and ash (18.57 and 0.90%, respectively) and the highest level of ether extract compared to loin (3.37 and 1.90%, respectively). Higher levels of cholesterol were found in rump compared to loin (40.91 e 30.93 mg 100 g-1, respectively). The uncooked loin showed lower content of saturated fatty acids and higher content of polyunsaturated fatty acids. The best values for the omega-6: omega-3 ratio was observed in the uncooked beef. In the present study, the loin was healthier due to the higher amount of polyunsaturated fatty acids compared to rump. Cooking the meat decreases the levels of polyunsaturated fatty acids, omega-3, omega-6 and the omega-6: omega-3 ratio.

Objetivou-se avaliar o efeito de diferentes fontes proteicas (farelo de soja, farelo de algodão, farelo de amendoim e farelo de girassol) sobre o consumo de matéria seca e nutrientes, desempenho produtivo e medidas corporais de novilhas leiteiras, mestiças Holandês x Zebu, recriadas em confinamento. O delineamento experimental foi em blocos completos casualizados, constituído por seis repetições e quatro tratamentos. Os valores médios de ingestão de extrato etéreo (IEE, kg dia-1) apresentaram diferença estatística (p < 0,05). A ingestão de fibra em detergente neutro em % do peso corporal foi superior (p < 0,05) na dieta com farelo de girassol (1,01 %PC) em relação à dieta com farelo de soja (0,84 %PC). O ganho médio de peso corporal promovido pela dieta com o farelo de soja foi superior (0,95 kg dia-1) à dieta com farelo de girassol (0,82 kg dia-1), e no peso corporal final a dieta com o farelo de soja foi superior aos demais (p < 0,05). A medida biométrica perímetro torácico apresentou maior grau de associação com o peso corporal (0,93). O farelo de soja proporciona melhor desempenho produtivo a novilhas mestiças Holandesa x Zebu, alimentadas com dietas à base de cana-de-açúcar. Contudo, o farelo de algodão, farelo de amendoim e farelo de girassol pode ser possíveis substitutos do farelo de soja.

This study evaluated the effect of different protein sources (soybean meal, cottonseed meal, peanut meal and sunflower meal) on dry matter and nutrient intake, productive performance and body measurements of dairy heifers, Holstein x Zebu, recreated in confinement. The experiment consisted in a randomized complete block design made up by 6 replications and 4 treatments. The mean values of ingestion of ether extract (EEI, kg day-1) were statistically different (p < 0.05). The neutral detergent fiber intake (NDFI, %BW) also presented differences (p < 0.05), with higher values in the diet containing sunflower meal (1.01% BW) in relation to the diet with soybean meal (0.84% BW). The average daily weight gain using the diet with soybean meal was superior (0.95 kg day-1) to the diet with sunflower meal (0.82 kg day-1), and considering the final body weight, the diet with soybean meal was superior to the other treatments (p < 0.05). The heart girth presented greater association with body weight (0.93). The soybean meal promoted the best productive performance of crossbred Holstein x Zebu heifers fed diets based on sugarcane. However, cottonseed meal, peanut meal and sunflower meal can be possible alternatives to soybean meal.

The objective was to evaluate the addition of vegetable oils protected or not from rumen degradation in the diet of feedlot-finished young bulls and their effects on performance and carcass characteristics. Thirty-five Nellore males of 402.69±14.90 kg initial weight and 18±2 months of age were utilized. The animals were confined for 96 days, after 28 days of adaptation, and slaughtered at 532.17±30.25 kg. Experimental diets were: control (715 g total digestible nutrients - TDN/kg of dry matter - DM), with addition of soybean oil or fresh linseed oil, and with the addition of the same oils protected from rumen degradation (765 g TDN/kg DM). All diets were formulated with the same amount of protein and with a roughage:concentrate ratio of 40:60, with sugarcane as the only roughage. The addition of oil, regardless of the type and processing, resulted in greater body weight gain (1.17 and 1.41 kg/animal/day), better feed (0.11 and 0.14 kg weight gain/kg DM ingested) and protein efficiency (0.86 and 1.09 kg weight gain/kg crude protein ingested), heavier carcasses (280.3 and 298.0 kg), with better yield (54.5 and 55.5%) and thicker subcutaneous fat (5.1 and 7.5 mm backfat thickness) and with heavier prime cuts, for control diet and the other treatments, respectively. The use of soybean or linseed oil protected or not from rumen degradation only changed the intake of a few nutrients and carcass yield and depth. Thus the addition of energy sources in the diet is beneficial for finishing feedlot bulls. For this addition, either soybean or linseed oils can be used, and the processing of these oils is only useful to facilitate the mixing with the other ingredients of the diet.
